As most of you know i was sick this past week. I caught a cold/flu a few days before Christmas and was so bummed. Good thing i had all my gift shopping done lol. This year’s holiday was going to be small and low key. My sister and i had planned to be with some more of the family but everyone had their own schedule. I decided to make dinner for us since i didnt contribute much to our huge thanksgiving feast. I cooked my favorite mouth watering cheesy chicken green chile enchiladas. They are amazing! Even though i was still a little sick i gained my appetite back to have some of those. We had cookies, cupcakes, home made chocolate dipped strawberries, root beer floats and more for desert. I also brought over appetizers too! I wish we had more people stop by, we have so much leftover. I recieved so many nice gifts, i feel so spoiled =) I am very greatful and fortunate. Even the puppies and kitties got some gifts. Its hilarious to see how excited they get to play with new toys and eat their treats.The tree was beautiful and blanketed with gifts. Our stockings were so full they couldnt even hang from the fire place lol. If only i was sick this would’ve been perfect. For the rest of xmas we will be watching movies and playing wii. I genuinley hope everyone had a memorable holiday!!
Enchiladas for X-Mas, I think I <3 you
When I was growing up, I had a Mexican friend whose mom would make tamales for Christmas, they were delish. Tonight we had the traditional WASP (even though we're Catholic) dinner of ham and sweet potatos. It was good, but I miss the tamales… and your cheesy enchiladas look great!

Glad you got better enough to enjoy some Christmas. Green chile enchiladas are the best. We had ham and potato salad, I made some deviled eggs. We’re having tamales for New Years. Hope you get fully recovered real soon.
